  • For the lemon pie jelly: Blend the cream cheese together with the lemon juice, condensed milk, evaporated milk, and half of the chopped vanilla cookies. When the ingredients begin to blend, lower the speed of the blender, uncover, pour in the melted gelatin and the green food coloring without stopping the blending until perfectly integrated. Remember that you should obtain a mint-colored mixture. Set aside.
  • For the lemon jelly: Dissolve the lemon-flavored gelatin in hot water with the help of a whisk and make sure to mix perfectly so that no lumps remain. Pour in the melted gelatin and integrate. Set aside.
  • Use two different containers for the jellies, one in the shape of a tower and the second in the shape of a spiral. Grease the molds with a little cooking spray and distribute the grease with paper towels.
  • For the lemon pie jelly, pour a little of the mixture into the tower-shaped container, filling it halfway, add some of the remaining chopped vanilla cookies, and cover with more mixture, finally top with more vanilla cookies. For the lemon jelly, pour the mixture into a spiral-shaped container. Refrigerate both lemon jellies until set.
  • Once the jellies are set, unmold them. Place the fondant eyes and serve immediately. Kids will love these Blobby jellies!
