4 envelopes unflavored gelatin powder, divided into 2 parts
1 cup cookies, ground vanilla
1/4 cups butter, melted
3/4 cups sugar, divided into 2 parts
1/4 cups water, cold
1 cup pineapple juice
2 cups whipping cream
1 teaspoon vanilla essence

Mix the contents of the strawberry gelatin in a bowl with 1 ½ cups of boiling water along with a packet of gelatin.
Mix vigorously with a whisk until fully dissolved. Repeat this step with the other flavors.
Place each flavor in separate molds, wait for it to cool slightly and refrigerate until fully set.
Once firm, cut the gelatin into cubes of your desired size. To unmold, dip the molds in warm water for 10 seconds.
Preheat the oven to 180°C.
Crush the cookies, mix them with the melted butter and half of the sugar. Form a crust in a mold. Bake for 10 minutes and let cool.
Mix another packet of gelatin with 1/4 cup of cold water. Heat the pineapple juice in the microwave for 1 minute. Combine with the gelatin. Let cool.
In a mixer, mix the whipping cream, vanilla extract, and the rest of the sugar until peaks form. Gradually incorporate the pineapple juice and gelatin mixture.
Pour the mixture into the mold with the cookie crust and gradually incorporate the flavored gelatin cubes. Tap the mold against the table to remove air.
Plastic wrap and refrigerate overnight.
To unmold, run a knife that has been dipped in hot water along the edges.
