Bring the milk to a boil with the cinnamon and vanilla for 20 minutes, add the sugar, and let it boil for another 20 minutes.
Remove from heat and take out the cinnamon stick and the vanilla pod if you used it instead of extract. Let it cool completely.
Beat the egg yolks and mix with the cooled milk. Fill eight small molds with the mixture and place in a preheated oven at 180°C in a tray with water that reaches halfway (water bath) for 20 minutes or until a toothpick comes out clean.
Remove from the oven and the water bath and place under the broiler for a few minutes to brown. Refrigerate and serve very cold.
