Keto Filled Donuts

  • 1/4 cups butter, melted
  • 1/4 cups almond milk
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 cup almond flour
  • 1/3 cups monk fruit, (monk fruit)
  • 1 teaspoon cinnamon powder
  • 2 teaspoons baking powder
  • 1/8 teaspoons salt
  • 3 tablespoons butter, melted, to grease the mold
  • 1 cup blueberries
  • 1/2 cups monk fruit, for the glaze
  • 3/4 cups cream cheese, for the glaze
  • 1/4 cups butter, melted for the glaze
  • 1 teaspoon vanilla essence, for the glaze
  • 1/2 cups almond milk, for the glaze
  • blueberries, for decorating

  • Mix in a bowl the melted butter with almond milk, egg, and vanilla extract until you achieve a homogeneous consistency.
  • In another bowl, sift the almond flour, monk fruit, cinnamon powder, baking powder, and salt and mix well.
  • Incorporate the dry ingredients into the liquids and mix with the help of a whisk.
  • Grease the donut mold with butter and pour two tablespoons of the donut mixture, add the blueberries and cover with more donut mixture until just below the edge, leaving about one centimeter free.
  • Bake for 30 minutes at 180 °C. Remove from the oven and let cool.
  • For the glaze, beat the cream cheese, add the melted butter, monk fruit, vanilla extract, and almond milk. Dip the donuts in the glaze and let them dry.
  • Serve, decorate with blueberries, and enjoy.
