  • 1/2 cups oil
  • 1 cup water
  • 1 cup wheat flour
  • food coloring, (optional color to taste)
  • 1 can evaporated milk
  • 1 can condensed milk
  • 1 table cream
  • 190 grams cream cheese
  • 4 kiwis, for decoration
  • 2 sticks unsalted butter
  • 380 grams cream cheese
  • 200 grams powdered sugar
  • 150 grams vanilla cake, blueberry flavor

  • Mix the ingredients for the cake in a mixer, without adding the vegetable coloring; divide the mixture into two parts, and from each one, set aside ½ cup to add the vegetable coloring to taste and play with the colors in the mixtures.
  • Grease and flour two molds of the same size, in this case, it is 20cm in diameter, pour in the mixtures that do not have the coloring and then add the ones that have the vegetable color. Bake for 40 minutes at 160°C, your cake will be ready if a knife comes out clean when inserted. Let it cool and unmold.
  • Pour the evaporated milk, condensed milk, cream, and finally the cream cheese into the blender. Blend until you have a homogeneous and slightly thick mixture. Note: Do not add water or milk. Once the cakes are cool, soak one of them with a cup of this dairy mixture and reserve the remaining mixture in the refrigerator.
  • Cream the butter until it softens, and gradually add 190g of cream cheese and powdered sugar by the teaspoon, and finally add the other 190g of cream cheese, adjusting the sweetness to your liking. I don't like it too sweet. The cake that was soaked with the dairy will be the base of the cake, cover it with a layer of ½ cm of the creamy mixture you just made.
  • Peel and slice the kiwis thinly and generously place them over the creamy base, reserving any leftover kiwi for the final decoration. Place the other cake on top of the kiwis on the base of the cake and soak it with the other cup of the 4 dairy products you reserved. Use the leftover cream to lightly cover the sides and place the reserved kiwi on top, and on top of the cake, spread the blueberry mirror with a spatula, not reaching the edges; using a star tip, pipe along the edge without the mirror and also on the sides between the spaces left by the kiwi.
