Knee Buñuelos

  • 1 1/2 cups flour, for the buñuelos
  • 2 tablespoons vegetable oil, for the buñuelos
  • 1 teaspoon salt, for the buñuelos
  • 1 teaspoon vanilla essence, for the buñuelos
  • 2 tablespoons sugar, for the buñuelos
  • 1/2 cups water, for the buñuelos
  • 1 cup granulated piloncillo, for the honey
  • 1/2 cups water, for the honey
  • 1 stick cinnamon, for the honey
  • 1 star anise pod, for the honey

  • In a bowl, mix all the ingredients for the buñuelos for 15 minutes or until you obtain a homogeneous and firm dough. Let the dough rest for 30 minutes.
  • For the piloncillo honey, in a small pot over medium heat, heat the water, add the piloncillo, cinnamon, and anise; let it cook for 10 minutes until it becomes a syrup.
  • On a floured surface, take a portion of the dough and roll it out to a thickness of 3 mm and 25 cm in diameter; repeat the same procedure with the remaining dough.
  • Heat oil in a pot over medium heat and fry the buñuelos on both sides for 5 minutes.
  • Serve on a flat plate and pour the piloncillo honey over them; enjoy with a cup of coffee from the pot.
