Ladyfingers

These cookies, also known as ladyfingers, are used in various desserts like tiramisu.

  • 1 cup flour
  • 4 eggs
  • 1/2 cups icing sugar, or fine granulated sugar
  • 1 teaspoon vanilla essence
  • 1/8 teaspoons cream of tartar
  • 1/4 cups icing sugar

  • Beat the egg yolks, half of the sugar, and the vanilla until pale and fluffy.
  • Beat the egg whites with the cream of tartar and the rest of the sugar until soft peaks form.
  • Incorporate the egg yolks into the egg whites, folding in the flour gradually using a sieve.
  • Put into a piping bag with a round tip (number 9 Ateco).
  • Place on parchment paper in the desired shape and sprinkle with powdered sugar.
  • Bake for 10 to 12 minutes.
