Lemon and Yogurt Pancake

A healthy and delicious combination with this lemon yogurt pancake.

  • 1/2 cups lemon juice
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 200 grams yogurt, natural
  • 1 cup sugar
  • 8 eggs
  • 1 lime zest
  • 1/2 teaspoons vanilla essence
  • 1/2 cups vegetable oil

  • Preheat the oven to medium temperature.
  • Prepare a pancake mold (greasing and flouring or with non-stick paper).
  • Combine in a large bowl the flour, baking powder, and salt.
  • In another bowl, mix the rest of the ingredients. Beat well until you have a homogeneous mixture.
  • Slowly add the flour, beating between each ingredient incorporated.
  • Once the mixture is finished, place it in the mold.
  • Bake for 30 to 40 minutes or until a clean wooden stick comes out without batter.
  • Let cool and unmold.
