Lemon Cupcake

  • 1 San Juan® egg
  • 2 teaspoons lime juice
  • 1/2 teaspoons vegetable oil
  • 1 teaspoon lime zest
  • 3 tablespoons flour
  • 1/4 tablespoons baking powder
  • 1 tablespoon sugar
  • 3/4 cups flour, 160 g, for the French meringue
  • 1 pinch salt
  • 1 cup sugar
  • lime, to decorate

  • Spray the cup with the cooking spray, add the San Juan® Egg, the lemon juice, the vegetable oil, the lemon zest, and mix with the help of a fork, add the flour, the baking powder, the sugar, mix until smooth.
  • Place in the microwave and cook for 1 minute and a half. Rest for 20 seconds in the microwave before opening.
  • For the French meringue, beat the San Juan® Egg Whites with a pinch of salt, and add the sugar little by little in the form of rain until you see that the meringue changes color and has a firm and shiny consistency.
  • Decorate the cup cake with the meringue, flame and decorate with lemon.
