3/4 cups sugar
3 tablespoons unsalted butter , at room temperature
1 tablespoon lime zest
3 eggs , egg whites separated from the yolks
3 tablespoons flour
1 cup cow's milk , to make the buttermilk
1/4 cups yellow lemon juice

Preheat the oven to 180 degrees.
Grease six custard cups.
With an electric mixer, blend the sugar, butter, and lemon zest.
Add the egg yolks to the mixture.
Add the flour in three parts, alternating with the milk.
Using clean mixer beaters, beat the egg whites in another bowl until peaks form.
Incorporate into the previously prepared mixture with folding movements.
Divide everything among the custard cups and place in a large Pyrex dish.
Add water to the Pyrex (be careful not to get any into the custards) until it covers them halfway.
Bake until the cakes start to brown, about 35 minutes.
Remove from the oven and serve hot or cold as desired.
