Lemon Custards

These lemon custards are baked, creating a type of cake on top and a creamy custard below.

  • 3/4 cups sugar
  • 3 tablespoons unsalted butter , at room temperature
  • 1 tablespoon lime zest
  • 3 eggs , egg whites separated from the yolks
  • 3 tablespoons flour
  • 1 cup cow's milk , to make the buttermilk
  • 1/4 cups yellow lemon juice

  • Preheat the oven to 180 degrees.
  • Grease six custard cups.
  • With an electric mixer, blend the sugar, butter, and lemon zest.
  • Add the egg yolks to the mixture.
  • Add the flour in three parts, alternating with the milk.
  • Using clean mixer beaters, beat the egg whites in another bowl until peaks form.
  • Incorporate into the previously prepared mixture with folding movements.
  • Divide everything among the custard cups and place in a large Pyrex dish.
  • Add water to the Pyrex (be careful not to get any into the custards) until it covers them halfway.
  • Bake until the cakes start to brown, about 35 minutes.
  • Remove from the oven and serve hot or cold as desired.
