Wash the strawberries and the lemon. Remove the green tops from the strawberries and cut them into pieces. Grate the skin of half a lemon, avoiding the white part. Blend the strawberries. Measure 125ml of the blended strawberries and set the rest of the puree aside in the refrigerator.
Separate the egg whites from the yolks. Next, place half of the yolks in a bowl and reserve the other two in the refrigerator for another preparation. Beat the yolks with the strawberry puree, one teaspoon of grated lemon peel, and two tablespoons of powdered sugar.
Whip the egg whites until stiff peaks form with the rest of the sugar (add a pinch of salt), gently mix with the remaining strawberry puree, divide into molds, and bake for 10 minutes in the middle of the oven, preheated to 200º Celsius.
