Lime, Yogurt, and Cardamom Cake

This lime cake is delicious and different, thanks to the touch of cardamom it contains.

  • vegetable oil
  • 1 piece lime peels
  • 1 cup plain yogurt
  • 1 cup sugar
  • 3 eggs
  • 3 cups flour
  • 1 envelope yeast
  • 2 tablespoons lime juice
  • 2 tablespoons lime zest
  • 1 teaspoon cardamom, for the icing
  • 1 lime, for the icing
  • 2 cups icing sugar, for the icing
  • 4 tablespoons water, for the icing

  • Preheat the oven to 170ºC.
  • Fry the lime zest in the oil for a few seconds, being careful not to burn it. Let cool slightly.
  • Pour the oil into a bowl, whisk with a balloon whisk and add the yogurt, sugar, eggs, sifted flour mixed with baking powder, lime juice, and lime zest while continuing to whisk. It is very important not to stop mixing.
  • Grease a rectangular mold, pour the mixture and bake for 40 to 45 minutes.
  • Remove from the oven when golden, let cool.
  • Prepare the icing by mixing all the ingredients in a bowl. Drizzle the cake with this and let it dry.
