Fry the lime zest in the oil for a few seconds, being careful not to burn it. Let cool slightly.
Pour the oil into a bowl, whisk with a balloon whisk and add the yogurt, sugar, eggs, sifted flour mixed with baking powder, lime juice, and lime zest while continuing to whisk. It is very important not to stop mixing.
Grease a rectangular mold, pour the mixture and bake for 40 to 45 minutes.
Remove from the oven when golden, let cool.
