Lychee Chocolate Cupcakes

  • 1 Litchi Vita + ® Cup, for the batter
  • 3 1/2 cups oat flour, sifted, for the batter
  • 1 teaspoon baking powder, sifted, for the batter
  • 1/2 teaspoons salt, for the batter
  • 3 eggs, for the batter
  • 1/4 cups honey, for the batter
  • 1/4 cups vegetable oil, for the batter
  • 1/2 cups whipping cream
  • 1 cup semisweet chocolate, sugar-free, melted
  • 1 1/2 cups low-fat cream cheese, at room temperature
  • Litchi Vita + ® Cup, just fruit, without apple juice and aloe vera

  • Preheat the oven to 180 °C.
  • Blend the contents of the lychee Vita+® cup with only half the apple juice and aloe vera, until a thick consistency is achieved. Strain and set aside.
  • In a bowl, mix the oat flour with the baking powder, table salt, eggs, honey, and vegetable oil using a whisk. Pour in the blended pulp of lychee Vita+® and mix until you obtain a thick mixture.
  • Using a spoon, pour the mixture into cupcake liners placed in a cupcake mold. Bake at 180 °C for 25 minutes, or until golden brown. Remove from the oven and let cool.
  • In a deep saucepan, pour the heavy cream and heat over low heat. When it begins to bubble, add the melted chocolate and stir constantly until combined, ensuring the heat remains low to avoid burning the chocolate. Remove from heat once combined and let cool for a few minutes.
  • Soften the light cream cheese using a mixer, and once it has a spreadable consistency, add the chocolate mixture and blend. Place the mixture into a piping bag.
  • Decorate the cupcakes with the chocolate cream, add a piece of lychee Vita+®, and you're done.
