M&M'S Macarons

Have fun making this M&M'S macaron recipe with the most fun colors, which represent M&M'S® chocolates 120 g, and of course, add your special touch. Enjoy!

  • 150 grams almond flour, for the macarons
  • 150 grams icing sugar, for the macarons
  • 55 grams egg white, for the macarons
  • gel food coloring, blue, red, yellow, and green, for the macarons
  • 55 grams egg white, for the Italian meringue
  • 150 grams granulated sugar, for the syrup
  • 50 milliliters water, for the syrup
  • 1 cup M&M'S® Chocolates 120 gr, for the filling
  • 2 cups semisweet chocolate, in small pieces, for the filling
  • 1 cup whipping cream, warm, for the filling
  • chocolate, melted, for decoration
  • M&M'S® Chocolates 120 gr, for decoration

  • Blend the almond flour and powdered sugar for 3 minutes or until you obtain a very fine powder. Sift the mixture twice to eliminate any lumps. Set aside.
  • In a bowl, add the egg whites and gel food coloring. Mix completely with a whisk. Repeat for each color of gel food coloring.
  • Add the dry mixture and fold in until you obtain a homogeneous and moist mixture. Set aside.
  • For the Italian meringue: Pour the egg whites into a stand mixer bowl with a whisk attachment. Do not mix until the syrup is ready.
  • For the syrup: Add the sugar and water to a small pot over medium heat. When the mixture reaches 100 °C, start beating the egg whites on low speed. When the syrup reaches 117 °C, pour it over the semi-whipped egg whites and, while continuing to beat, increase the speed and beat for 8 minutes or until the mixture cools and you obtain a glossy meringue.
  • Add half of the meringue to the colored mixture and fold in perfectly. Incorporate the other half of the meringue and mix until you achieve a semi-thick, smooth, and shiny mixture. Transfer the mixture to a piping bag with a plain tip.
  • Form the macarons on the circles of parchment paper on the tray. Tap the tray gently to remove bubbles or peaks that may have formed. Let the macarons dry for 40 minutes.
  • Bake at 140 °C for 15 minutes. Let cool and set aside.
  • For the filling: Chop the M&M'S® chocolates 120 g, add to a bowl and mix with chocolate and whipping cream until completely dissolved. Transfer to a piping bag.
  • To form the macarons: Fill and create a kind of sandwich.
  • Assemble the M&M'S macarons on a board, decorate with melted chocolate, sprinkle with M&M’S® chocolates 120 g, and place more chocolates around.
