  • 100 grams unsalted butter
  • 350 grams sugar
  • 250 grams egg
  • 270 grams flour
  • 3 grams baking powder
  • 1 pinch salt
  • 150 grams sour cream
  • 1 mamey seed
  • 1 mamey
  • cream cheese
  • icing sugar

  • Sift the flour, baking powder, and salt.
  • Cream the butter with the sugar and mix well.
  • Add the eggs gradually until they are perfectly integrated,
  • Add the flour in 3 parts, alternating with the blended cream and pixtle.
  • When the mixture is perfectly integrated, transfer it to the greased, floured molds with star paper at the bottom.
  • Bake the cakes in a preheated oven at 160 °C for 45 minutes. Insert a toothpick to check for doneness and let cool.
  • For the mamey frosting: Beat the cream cheese, butter, mamey, and powdered sugar until you achieve a smooth consistency.
  • Place the frosting in a piping bag and use it as you like for filling and topping.
