Beat the butter with the sugar until creamy, add orange zest and the egg yolks one by one while continuing to beat. Then add the yogurt, sifted flour with the baking powder, and finally the egg whites beaten to stiff peaks, gently folding in. Grease the pan and flour it, pour in the mixture, and bake at 200°C for 30 to 40 minutes.
Once ready, let cool, fill with ganache, cover with the cream cheese frosting, and refrigerate for 30 minutes.
Color the fondant blue and roll it out, cover the cake, and smooth it perfectly. Shape the dolphins, corals, shells, fish, and pebbles and place them on the cake to create waves.
For the cream cheese frosting: beat the cream cheese at room temperature with the butter and sifted powdered sugar, and finally the Grand Marnier. Chill this. Prepare one day in advance.
For the chocolate ganache: heat the cream with the honey, when it comes to a boil turn off the heat, add the chocolate, mix perfectly, and once cool, beat with a mixer and add the Grand Marnier. Prepare one day in advance.
