Meringues with Dark Chocolate Ganache

  • 50 grams San Juan® egg whites
  • 125 grams granulated sugar
  • 125 grams icing sugar
  • 200 grams couverture chocolate
  • 80 grams cow's milk
  • 10 grams butter
  • 8 raspberries
  • 3 grams cocoa
  • 2 flowers, edible

  • Beat San Juan® Egg Whites in a mixer at medium speed and increase the speed until they reach soft peaks; at this point, add the refined sugar gradually while continuing to beat.
  • Stop beating and gently fold in the powdered sugar.
  • Place a silicone paper on a baking sheet and pipe kisses using a pastry bag and a star tip.
  • Bake for approximately 90 minutes at a temperature of 100° C.
  • Check that they are dry on the inside.
