Beat the egg whites using a whisk, gradually adding the sugar while continuing to beat. Add the lemon zest. Beat until stiff peaks form and the mixture is firm.
With a lightly greased spoon, take a bit of meringue and place it on a baking sheet lined with parchment paper. Repeat this process with the entire mixture.
Bake the meringues for 15 minutes or until they are slightly golden and easily lift off the parchment paper.
