1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoons salt
1 cup butter
1/2 cups raw sugar
2 eggs
2 teaspoons vanilla essence
3 cups oats
5 granny smith apples, peeled and diced for the filling
1 tablespoon lime juice, for the filling
1/2 cups raw sugar, for the filling
1/4 cups cornstarch, for the filling
1 teaspoon cinnamon, for the filling
1 pinch nutmeg, for the filling
1 pinch salt, for the filling
2 cups water, for the filling
2 tablespoons icing sugar, for decoration

Preheat the oven to 180°C, grease and flour a cupcake pan.
In a medium bowl, combine the flour, baking soda, cinnamon, and salt. Set aside.
Cream the butter in the mixer with the sugar. Add the eggs one by one and the vanilla while continuing to beat.
Add the dry ingredients and oats gradually and beat until incorporated.
Pour the mixture into the cupcake mold and cover completely to form a base. Freeze for about 20 minutes.
Bake the oat bases for 15 minutes or until golden brown. Cool and unmold.
For the filling, combine the apples with the lemon juice. In a separate bowl, combine the dry ingredients.
In a deep skillet, heat the water and add the dry ingredients and apples. Cook for about 15 minutes on low heat until the apples are cooked and soft.
Fill the oat bases with the apples and decorate with powdered sugar.
