Mini Apple Pie with Cinnamon

  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoons salt
  • 1 cup butter
  • 1/2 cups raw sugar
  • 2 eggs
  • 2 teaspoons vanilla essence
  • 3 cups oats
  • 5 granny smith apples, peeled and diced for the filling
  • 1 tablespoon lime juice, for the filling
  • 1/2 cups raw sugar, for the filling
  • 1/4 cups cornstarch, for the filling
  • 1 teaspoon cinnamon, for the filling
  • 1 pinch nutmeg, for the filling
  • 1 pinch salt, for the filling
  • 2 cups water, for the filling
  • 2 tablespoons icing sugar, for decoration

  • Preheat the oven to 180°C, grease and flour a cupcake pan.
  • In a medium bowl, combine the flour, baking soda, cinnamon, and salt. Set aside.
  • Cream the butter in the mixer with the sugar. Add the eggs one by one and the vanilla while continuing to beat.
  • Add the dry ingredients and oats gradually and beat until incorporated.
  • Pour the mixture into the cupcake mold and cover completely to form a base. Freeze for about 20 minutes.
  • Bake the oat bases for 15 minutes or until golden brown. Cool and unmold.
  • For the filling, combine the apples with the lemon juice. In a separate bowl, combine the dry ingredients.
  • In a deep skillet, heat the water and add the dry ingredients and apples. Cook for about 15 minutes on low heat until the apples are cooked and soft.
  • Fill the oat bases with the apples and decorate with powdered sugar.
