Mini Raspberry Pies

  • Preheat the oven to 180°C.
  • For the dough: In a bowl, place the flour, sugar, and butter, and using your hands, rub until it reaches a sandy consistency, then add the water.
  • Place the dough in a non-stick plastic wrap and refrigerate for 15 minutes before using. Set aside.
  • For the filling: heat the frozen raspberries over medium heat, add the apple, sugar, zest and lemon juice, vanilla extract, and cornstarch, cook for 10 minutes. Let cool and set aside.
  • On a floured surface and using a rolling pin, roll out the tart dough and cut to the size of your mold.
  • Using a heart-shaped cutter, cut out hearts.
  • Line the mold and add the cooled filling, cover with the hearts and refrigerate for 10 minutes.
  • Brush with egg and bake for 25 minutes.
