To make the cookies: In a food processor, add the flour, sugar, cocoa powder, salt, and baking powder until well mixed.
Add the margarine, milk, vanilla, and half a teaspoon of mint extract. Mix well.
In a bowl, pour the dough and start kneading with your hands until all the flour is well incorporated. Chill the dough in the refrigerator for 1 hour.
Preheat the oven to 176 °C (350 °F)
On some baking sheets lined with parchment paper or non-stick, remove the dough from the refrigerator and roll a bit of dough with a spoon and leave them on the sheets.
Do not place the dough balls too close together so they don’t stick, and flatten with your fingers. Bake for 12 to 14 minutes. Let the cookies cool completely.
For the coating: Melt the chocolate along with the margarine in a double boiler. Add the half teaspoon of mint extract and stir until smooth.
Coat the cookies with chocolate, making sure to remove the excess chocolate. Place the cookies on a tray and refrigerate.
Take out the cookies once the chocolate is firm.
