  • To make the cookies: In a food processor, add the flour, sugar, cocoa powder, salt, and baking powder until well mixed.
  • Add the margarine, milk, vanilla, and half a teaspoon of mint extract. Mix well.
  • In a bowl, pour the dough and start kneading with your hands until all the flour is well incorporated. Chill the dough in the refrigerator for 1 hour.
  • Preheat the oven to 176 °C (350 °F)
  • On some baking sheets lined with parchment paper or non-stick, remove the dough from the refrigerator and roll a bit of dough with a spoon and leave them on the sheets.
  • Do not place the dough balls too close together so they don’t stick, and flatten with your fingers. Bake for 12 to 14 minutes. Let the cookies cool completely.
  • For the coating: Melt the chocolate along with the margarine in a double boiler. Add the half teaspoon of mint extract and stir until smooth.
  • Coat the cookies with chocolate, making sure to remove the excess chocolate. Place the cookies on a tray and refrigerate.
  • Take out the cookies once the chocolate is firm.
