Mixed Fruit Tart

This mixed fruit tart recipe is very versatile as you can use your favorite variety of fruit. It's easy to prepare and with these different fruits, it has a lot of color that will make it look spectacular.

  • 500 grams pie crust
  • 95 grams cream cheese, at room temperature
  • 2 tablespoons honey
  • 1/4 teaspoons liquid vanilla
  • 1/2 cups whipped cream
  • 4 figs, cut into quarters
  • 1/2 cups raspberries
  • 1 mango, diced
  • 1/4 cups blueberries
  • 1 tablespoon brown sugar

  • Preheat the oven to 180°C.
  • Roll out the base on a lightly greased baking sheet; fold the dough over the edge. Prick the dough with a fork. Bake for 15 min. or until golden brown. Remove from the oven; cool completely on a rack.
  • Beat the cream cheese, honey, and vanilla in a medium bowl. Add the topping and mix well. Spread this over the base.
  • Arrange the fruit on top of the cream cheese mixture; sprinkle with sugar. Cut into wedges to serve. Refrigerate any leftover tart.
