You can't miss this creamy cheesecake with cubes of cherry and lemon gelatin inside, which will surprise you when you cut into it. It's very easy to prepare and doesn't require baking.
2 envelopes unflavored gelatin powder, (7 g each), hydrated and melted
1 tablespoon orange zest
1/4 cups orange juice

Process the cookies for 5 minutes until you get a fine powder. Mix with the butter in a bowl.
Pour the previous mixture into a cake mold and use a spoon to spread and press down to form a base. Refrigerate.
Dissolve the cherry gelatin in hot water, pour it into a baking dish, and refrigerate for 2 hours or until set. Unmold, cut into cubes, and set aside.
Repeat the previous procedure with the lemon gelatin.
For the cheesecake, beat the cream cheese with the whipping cream, sweetened condensed milk, orange zest, and orange juice, gradually adding the hydrated gelatin.
Pour over the cookie base, and add the cubes of cherry and lemon gelatin. Refrigerate for 2 hours or until set.
