Apple Cinnamon Muffins with Spices

The apple is a sweet fruit with an incredible aroma; it is high in fiber, antioxidants, and among its properties, it is high in vitamin C, anti-inflammatory, and regulates blood levels, etc. In this recipe, I was inspired by the muffins I love from a café, and what better way to make them myself with ingredients that are better for my health.

  • 1 cup rice flour
  • 1 cup whole wheat flour
  • 1/2 cups wheat bran
  • apple purée
  • 1 egg
  • 1 cup cow's milk
  • 1 lemon
  • 2 Golden Delicious apples, cut into small cubes
  • 1 tablespoon vanilla essence
  • 3/4 cups oil
  • 1 tablespoon cinnamon powder
  • 1 tablespoon nutmeg, ginger, clove, and cinnamon
  • 1/2 cups honey
  • 6 tablespoons raw sugar
  • 1 salt
  • 1/2 tablespoons baking soda
  • 1 tablespoon baking powder

  • Preheat the oven to 180ºC.
  • Sift the rice flour and whole wheat flour into a bowl, incorporate the bran, the spices, and mix well. Set aside. Heat the glass of milk and squeeze the lemon into it, then set aside.
  • In another bowl, use a whisk to beat the egg with the honey, sugar, apple puree, cup of milk, oil, and vanilla. Once well mixed, gradually incorporate the flour mixture without overmixing. Once ready, gently fold in the two diced apples.
  • Fill the muffin molds 3/4 full with the mixture to prevent overflow and bake for approximately 25 minutes.
  • Once ready, sprinkle a little ground cinnamon on top for decoration.
