Bacon Hot-Cake Muffin

My kids wanted something different to take to school, and that morning I was going to make hot cakes, so to make use of the ingredients, I added pieces of crispy bacon and made them into muffins.

  • 250 grams Gamesa® pancake mix
  • 1/2 cups cow's milk
  • 100 grams butter
  • 1 cup sugar
  • 2 eggs
  • 1/2 tablespoons vanilla essence
  • 200 grams bacon, fried in small pieces

  • Grease and flour the muffin molds.
  • Preheat the oven to 180 ºC.
  • Beat the butter until smooth and add the sugar, incorporating completely.
  • Add the eggs one by one and beat well.
  • Add the flour alternating with the milk and vanilla until finished, making sure to end with flour.
  • Finally, add the bacon, stirring well.
  • Pour into the prepared molds and bake at 180ºC for 15 to 20 minutes.
  • Unmold when they are still warm.
