Bacon Hot-Cake Muffin

My kids wanted something different to take to school, and that morning I was going to make hot cakes, so to make use of the ingredients, I added pieces of crispy bacon and made them into muffins.

250 grams Gamesa® pancake mix
1/2 cups cow's milk
100 grams butter
1 cup sugar
2 eggs
1/2 tablespoons vanilla essence
200 grams bacon, fried in small pieces

Grease and flour the muffin molds.
Preheat the oven to 180 ºC.
Beat the butter until smooth and add the sugar, incorporating completely.
Add the eggs one by one and beat well.
Add the flour alternating with the milk and vanilla until finished, making sure to end with flour.
Finally, add the bacon, stirring well.
Pour into the prepared molds and bake at 180ºC for 15 to 20 minutes.
Unmold when they are still warm.
