Carrot Muffin

Also known as morning glory, these muffins are perfect for accompanying our breakfast and can also be saved for dinner. With very basic and easily obtainable ingredients, we can prepare the best muffins.

  • 1 1/3 cups carrot, grated
  • 1 apple, small and peeled grated
  • 1 1/3 cups flour, standard
  • 3/4 cups sugar
  • 1/2 tablespoons baking soda
  • 1 tablespoon baking powder
  • 1/4 tablespoons salt
  • 1 tablespoon cinnamon powder
  • 1/2 cups vegetable oil
  • 2 eggs
  • 1/2 tablespoons vanilla essence

  • Preheat the oven to 180 degrees.
  • In a bowl, mix the dry ingredients: flour, sugar, baking soda, baking powder, salt, and cinnamon.
  • In a separate bowl, beat the eggs, oil, and vanilla.
  • Pour the wet ingredients along with the carrot and apple into the bowl of dry ingredients.
  • Gently stir, ensuring the flour is moistened.
  • Grease the cupcake mold with butter or spray it with oil.
  • Divide the batter into 12 equal portions.
  • Place the mold in the oven and wait 25 minutes or until a toothpick inserted into a muffin comes out clean.
