Cinnamon Apple Muffins

Unexpected visits and rainy weather make us prepare what we have in the pantry; quick and with a delightful aroma, these muffins will impress, plus adding something healthy like fruit.

  • 190 grams flour , sifted
  • 2 tablespoons baking powder
  • 90 grams unsalted butter , softened
  • 2 eggs
  • 90 grams sugar
  • 125 milliliters cow's milk
  • 50 grams apple purée
  • 1 tablespoon cinnamon

  • Preheat the oven to 180ºC.
  • Grease and flour the muffin molds.
  • Beat the eggs, add the softened butter and superfine sugar until you obtain a fluffy mixture.
  • Add the flour and cinnamon alternately with the milk, making sure to finish with flour. Beat for 3 minutes.
  • Add the apple puree and mix thoroughly.
  • Pour into the prepared molds and bake for 20 minutes until golden or firm to the touch.
