Crunch Muffins

These peach muffins are delicious, with a crunchy layer on top that will delight your family's palate; it's simple and kids love it, presentation is very important.

  • 1 1/2 sticks unsalted butter
  • 3/4 cups sugar
  • 1 teaspoon vanilla essence
  • 1 pinch salt
  • 4 eggs
  • 250 grams flour
  • 11 grams baking powder

  • 100 grams unsalted butter
  • 1 teaspoon liquid vanilla
  • 150 grams flour
  • 75 grams sugar

  • Preheat the oven to 180ºC.
  • Cut the peaches into long pieces and set aside.
  • Beat the 1 1/2 stick of butter with the 3/4 cup of sugar.
  • Add the vanilla extract and a pinch of salt, then add the eggs one by one while continuing to beat.
  • Mix the 250g of flour and baking powder and gradually add this to the previous mixture, folding gently.
  • Place the cupcake liners in the muffin molds and fill with the mixture to 3/4 of their capacity. Insert one or two strips of peach inside.
  • For the crunch, place the sifted flour, butter, sugar, and vanilla extract in a bowl and beat until crumbly.
  • Place the crunch on top of the muffin mixture and bake for 15 to 20 minutes.
