In a bowl, we put the eggs with the sugar and beat until both ingredients are well integrated and a whitish batter forms.
We add the vanilla or chocolate custard and mix with the spatula, we will no longer need the mixer.
We add the butter to the bowl and mix well with the spatula.
We sift the flour along with the baking powder and a pinch of salt over the mixture, integrating it with gentle folding movements from bottom to top.
This will result in a batter that is somewhat more liquid than that of regular muffins, so it can be poured into a measuring jug and used to fill the paper cups that we have previously placed on the muffin tray.
Finally, we sprinkle sugar mixed with cinnamon over the muffins and take them to the oven.
