Apple and Walnut Muffins

  • 100 grams butter
  • 3/4 cups cow's milk
  • 1 cup sugar
  • 3 eggs
  • 2 cups flour
  • 1 tablespoon yeast
  • lime zest
  • 1 teaspoon vanilla essence
  • 100 grams walnuts, chopped
  • 1 teaspoon cinnamon
  • 2 apples

  • First, we preheat the oven to 180ºC. Remember to have all the ingredients weighed and at hand so that none are forgotten, and ensure your hands and the workspace are perfectly clean. First, we peel the apples and cut them into small cubes. To prevent them from oxidizing, we can place them in a bowl with sparkling water or regular water. We beat the butter with the sugar until creamy, adding the eggs one by one, and then we add the lemon zest, cinnamon, vanilla, and walnuts. Once everything is perfectly mixed, we add the flour and baking powder, previously sifted gently, and gradually add the milk. Finally, we add the apples, which should be well-drained, and mix carefully.
  • We place the special muffin cups in a mold that is also specially designed for this, filling our batter up to 3/4 of the cup so that they don’t spill while baking. We put them in the oven for 25 minutes. Never open the oven before at least 15 minutes have passed, or they will deflate and be ruined.
  • When they have been in the oven for about 20 minutes, we should always check by poking them with a toothpick. If it comes out clean, they are done. Don’t leave them in the oven much longer, or they may become very dry. Well, I hope you like them.
