Don't hesitate to try this apple cinnamon muffin recipe. They are very easy to prepare since they use pancake flour. They taste delicious as a breakfast, a snack, or a nice midday craving. EAT WELL
Preheat the oven to 200 degrees Celsius or 400 degrees Fahrenheit.
Grease and flour a muffin tray, or place cupcake liners in the tray.
Mix the pancake flour, flour, brown sugar, baking powder, and cinnamon in a bowl. Stir and add the diced apples until well coated.
In a small deep bowl, mix the milk, vegetable shortening, egg, and vanilla. Add to the flour mixture until everything is quickly incorporated. Fill the cupcake liners until 3/4 full.
Mix the sugar and half a teaspoon of cinnamon. Sprinkle 1/4 teaspoon on top of each muffin.
Bake for 18-20 minutes or until a toothpick inserted comes out clean.
Let cool for 2 minutes and remove from the mold.
