Apple Cinnamon Muffins

  • 1 cup Gamesa® pancake mix
  • 1 cup flour
  • 1/3 cups brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 apple
  • 1 cup cow's milk
  • 1/3 cups vegetable shortening
  • 1 egg
  • 1 1/2 teaspoons vanilla essence
  • 1 1/2 tablespoons sugar
  • 1/2 teaspoons cinnamon

  • Preheat the oven to 200 degrees Celsius or 400 degrees Fahrenheit.
  • Grease and flour a muffin tray, or place cupcake liners in the tray.
  • Mix the pancake flour, flour, brown sugar, baking powder, and cinnamon in a bowl. Stir and add the diced apples until well coated.
  • In a small deep bowl, mix the milk, vegetable shortening, egg, and vanilla. Add to the flour mixture until everything is quickly incorporated. Fill the cupcake liners until 3/4 full.
  • Mix the sugar and half a teaspoon of cinnamon. Sprinkle 1/4 teaspoon on top of each muffin.
  • Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  • Let cool for 2 minutes and remove from the mold.
