I love anything with apple and cinnamon, and if it can be in a muffin with cream cheese frosting, even better! It's a great recipe to relax and treat yourself, and the best part is that it leaves a delicious smell when you bake them.
1 1/4 sticks unsalted butter , at room temperature
1 cup sugar
3 eggs
1 1/2 teaspoons vanilla essence
1 1/4 cups plain yogurt
2 1/4 cups flour
3/4 cups raw sugar
2 1/4 teaspoons cinnamon powder
3/4 teaspoons salt

3 tablespoons cow's milk
90 grams cream cheese, at room temperature

Preheat your oven to 175°C or 350°F and place the cupcake liners in your muffin molds.
Sift together the 2 1/2 cups of flour with the baking soda, baking powder, and 1/2 tsp of salt.
With your mixer on medium-high speed, cream the butter and sugar until the mixture is fluffy. Add the eggs one at a time, beating until each is incorporated. Add the vanilla, the flour mixture, and the yogurt. Mix thoroughly.
Divide your mixture and pour it over each cupcake liner. Sprinkle your Strudel topping over the mixture and bake for 20 minutes until they turn a golden color and your toothpick comes out clean. Take your muffins out of the oven and let them cool before removing them from the mold.
To finish, frost your muffins and enjoy.
To prepare the Strudel Topping:
mix the 2 1/4 cups of flour with your 3/4 cup of brown sugar and the cinnamon. Using a mixer, 2 knives, or even your hands, incorporate the butter to form crumbs.
To prepare your frosting, using a whisk, mix the powdered sugar (sifted), milk, and cream cheese.
