Apple Muffins with Pineapple Syrup

Delicious muffins with chunks of apple bathed in pineapple syrup. Spectacular for sharing at snacks; if you don't want to add the syrup, you can serve them with ice cream.

  • 1 1/2 cups flour
  • 3/4 cups sugar
  • 1/4 cups vegetable oil
  • 100 grams margarine
  • 1 teaspoon cinnamon powder
  • 1 teaspoon baking powder
  • 1/2 teaspoons salt
  • 2 eggs
  • 1/2 cups nut , ground
  • 1 cup apple, chopped into small cubes
  • 1/2 cups raisins, (let them soak in water for about half an hour) and then drain
  • syrup, pineapple in small pieces

  • In a bowl, place the flour, baking powder, cinnamon, salt, and walnuts.
  • In another bowl, beat the eggs with the sugar and oil using a wooden spoon.
  • Gradually add the ingredients from step one to the previous mixture.
  • Then add the apples and raisins.
  • Finally, add the previously melted butter and combine all the ingredients.
  • Place in the molds.
  • Bake for about 30 minutes; the oven should be preheated to 180ºC.
  • Once ready, let cool and then place the pineapple syrup on top or serve with your preferred ice cream.
