Banana, Walnut, and Yogurt Muffins

A delicious recipe that I prepare for a special occasion or simply to enjoy a little craving, as it is very easy to make with ingredients that we usually have at home and that I enjoy with my family and friends.

  • 2 cups wheat flour
  • 1 1/2 cups raw sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 tablespoons salt
  • 1 1/2 sticks unsalted butter
  • 1 cup plain yogurt
  • 1 cup banana
  • 2 eggs
  • 1 tablespoon liquid vanilla
  • 1 cup oats
  • 1/2 cups nut , chopped

  • Preheat the oven to 275ºC.
  • Melt a little butter, or have it at room temperature.
  • Chop the walnuts and mash the bananas.
  • In a bowl, add the sifted dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  • Then add the butter, eggs, and vanilla, and mix with a mixer; once well combined, add the banana and yogurt and beat again until everything is well incorporated.
  • At the end, add the oats and the walnuts and mix with a spatula or a spoon.
  • Prepare the molds with the liners. And bake for 30 to 40 minutes.
