This is my favorite recipe; they are delicious muffins made with ground almonds and filled with cream cheese and blackberries; the flavor contrast is truly exquisite.
Preheat the oven to 190ºC and place the special muffin liners on a tray.
Mix the butter and ground almonds in the mixer.
Add the eggs one by one and beat until the mixture is ready.
Gradually, while continuing to beat, incorporate the sifted flour along with the baking powder.
Cut the cream cheese into cubes and mash the blackberries a little, making a mixture with the tablespoon of sugar.
Using a spoon, place the muffin batter mixture into the liners and put a cube of cheese in the center, then cover it with the mashed blackberry and a little more batter.
Bake for 25 minutes until they puff up.
