Easy Lemon Muffins

These muffins are for you; the good thing about a muffin is that, unlike a cupcake, it is less sweet and NEVER has frosting. This recipe is simplicity at its finest. You’ll be surprised at how quick it is.

  • 4 eggs
  • 150 grams sugar
  • 200 milliliters corn oil
  • 120 milliliters cow's milk
  • 350 grams flour, sifted
  • 2 teaspoons baking powder
  • 1 lime, (the juice and the zest)

  • Put the eggs and sugar in a bowl and beat on high speed for 3 minutes.
  • Add all the ingredients in the order of the list.
  • Beat very well.
  • Place the mixture in silicone cups.
  • Bake for 15 minutes at 180ºC.
