Lemon Madeleines

The lemon madeleines recipe we present is delicious and simple. They are rich little cakes with a very fluffy texture, resulting from using oil instead of butter. It is a sweet dessert with a tangy flavor from the lemon.

  • 1/4 cups Oléico® safflower oil
  • 1/3 cups sugar
  • 2 eggs
  • 1/2 cups flour
  • 1/2 limes, (the zest from this)
  • 1 pinch salt
  • 2 tablespoons Oléico® safflower oil
  • flour, necessary amount
  • icing sugar, necessary amount

  • Preheat the oven to 190° C.
  • Grease the mold and add flour, shaking the mold to remove the excess flour.
  • Add the lemon zest to the oil.
  • In a bowl, add eggs and sugar. Beat on high speed until the mixture changes color, thickens, and triples in volume. Turn off the mixer.
  • Add one-third of the flour and incorporate it into the egg using folding movements with a spatula. Continue adding flour. Add the oil with orange zest and incorporate it just as you did with the flour.
  • Pour the mixture into the molds.
  • Bake for 12 to 13 minutes. Once baked, let them cool for 10 to 15 minutes. Flip the mold, and decorate with a sprinkle of powdered sugar (previously sifted).
