The lemon madeleines recipe we present is delicious and simple. They are rich little cakes with a very fluffy texture, resulting from using oil instead of butter. It is a sweet dessert with a tangy flavor from the lemon.
Grease the mold and add flour, shaking the mold to remove the excess flour.
Add the lemon zest to the oil.
In a bowl, add eggs and sugar. Beat on high speed until the mixture changes color, thickens, and triples in volume. Turn off the mixer.
Add one-third of the flour and incorporate it into the egg using folding movements with a spatula. Continue adding flour. Add the oil with orange zest and incorporate it just as you did with the flour.
Pour the mixture into the molds.
Bake for 12 to 13 minutes. Once baked, let them cool for 10 to 15 minutes. Flip the mold, and decorate with a sprinkle of powdered sugar (previously sifted).
