Muffins with Orange Juice

Delicious muffins made with orange juice and pancake flour that give an exquisite flavor. They are low in calories because the oil replaces the butter.

  • 1 cup Gamesa® pancake mix, sifted
  • 1 cup wheat flour, sifted
  • 1 cup sugar
  • 1 orange peels, grated
  • 1 teaspoon baking powder
  • 1 pinch baking soda
  • 1 pinch salt
  • 1/2 cups orange juice
  • 1/2 cups vegetable oil
  • 4 eggs

  • Mix the first 7 ingredients; it is important to mix all the dry ingredients first, then set aside.
  • Mix the following 3 ingredients, all liquids, and set aside.
  • Combine the dry ingredients from step 1 with the liquid ingredients from step 2 and beat for 10 minutes if using a whisk, or 5 minutes if using a mixer.
  • Place the cupcake liners in the muffin pan and fill the mixture only halfway, as they will rise.
  • Place in a preheated oven for 30 minutes at 180°C.
