Pineapple Colada Muffins

This recipe was my son's idea, it's one of his favorite flavors, and when I started making muffins, he asked me to make one for him. It turned out much better than we expected; I hope you enjoy them as much as we do.

  • 1 cup Gamesa® pancake mix
  • 1 cup wheat flour
  • 2 tablespoons baking powder
  • 1/3 cups coconut oil
  • 1/3 cups sugar
  • 4 tablespoons coconut, unsweetened shredded coconut
  • 1 egg
  • 1 cup cow's milk
  • 2 slices canned pineapple, chopped

  • Preheat the oven to 180ºC.
  • In a bowl, mix the flours, sugar, baking powder, and shredded coconut.
  • Slowly add the coconut oil, egg, and milk.
  • Finally, add the pineapple and mix gently.
  • Place in floured muffin molds or lined with cupcake liners.
  • Bake at 180ºC for 15-20 minutes until lightly golden. Let cool.
