Pineapple Colada Muffins

This recipe was my son's idea, it's one of his favorite flavors, and when I started making muffins, he asked me to make one for him. It turned out much better than we expected; I hope you enjoy them as much as we do.

1 cup Gamesa® pancake mix
1 cup wheat flour
2 tablespoons baking powder
1/3 cups coconut oil
1/3 cups sugar
4 tablespoons coconut, unsweetened shredded coconut
1 egg
1 cup cow's milk
2 slices canned pineapple, chopped
Preparation

Preheat the oven to 180ºC.
In a bowl, mix the flours, sugar, baking powder, and shredded coconut.
Slowly add the coconut oil, egg, and milk.
Finally, add the pineapple and mix gently.
Place in floured muffin molds or lined with cupcake liners.
Bake at 180ºC for 15-20 minutes until lightly golden. Let cool.
