Pistachio Coconut Muffins

These muffins combine the distinctive flavor of pistachios with the tropical taste of coconut, unique flavors that ensure an incredible result every time you bake them. You will notice that these muffins will have a greater density than others you have tried. They naturally taste better accompanied by a good cup of coffee.

  • 2 eggs
  • 2/3 cups sour cream
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons vanilla essence
  • 1/2 cups almonds, toasted and ground (with shell)
  • 1/3 cups pistachios, (ground and shelled)
  • 1 cup sugar, granulated
  • 2 cups flour
  • 1 cup coconut
  • 1/3 cups pistachios, chopped for decoration

  • Preheat the oven to 180°C. Toast the almonds and pistachios for about 8 minutes. Once toasted, use a food processor or blender to grind them until you achieve a homogeneous mixture of particles.
  • In a separate bowl, mix the sugar, flour, baking powder, and baking soda. To this mixture, add the eggs, sour cream, vanilla, and the almond and pistachio mixture. (Mix with a mixer).
  • Finally, add the cup of coconut and continue mixing until the mixture is smooth.
  • Spray baking spray in the muffin pan or use muffin liners. Add the mixture and bake at 200°C for 20 minutes or until a wooden toothpick comes out completely clean.
