Red Cherry Muffins

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 2 1/2 cups flour
  • 1 1/2 teaspoons dry yeast
  • 1 pinch salt
  • 1 cup cow's milk
  • 2 teaspoons vanilla essence
  • 2 packages cream cheese, (approximately 180 grams)
  • 1 cup icing sugar
  • 12 cherries

  • Beat the butter until it has a creamy consistency, then mix it with the sugar until the ingredients are unified.
  • Add the eggs one by one. Do not add another egg until the previous one has been fully incorporated.
  • Add the flour, previously sifted and mixed with salt and baking powder. Mix well.
  • To finish, add the milk and vanilla.
  • Place the mixture in cupcake liners. Do not exceed 3/4 full. Bake for 15 minutes at 180 degrees. Check if the muffin is ready; if a toothpick inserted comes out dry, your muffin is ready.
  • To make the cherry topping, place the cream cheese and powdered sugar in a deep bowl, mixing them with a hand mixer.
  • Add cherry essence to the cream cheese mixture with powdered sugar, starting with one tablespoon and adjusting the flavor if necessary. Finally, add a little red gel food coloring so that the topping takes on the color of cherries.
  • Place the topping in a piping bag and decorate the cooled muffin. After applying the topping, decorate with a cherry and red sprinkles.
