Lemon Muffins

  • 300 grams wheat flour
  • 1 tablespoon yeast
  • 2 lemons, the zest
  • 200 grams sugar
  • 125 milliliters lemon juice , natural
  • 150 grams plain yogurt
  • 125 grams unsalted butter
  • 2 eggs

  • Preheat the oven to 200°C.
  • Place the cupcake liners on the muffin tray.
  • Sift the flour with the baking powder, add the sugar, and the lemon zest, and mix well, then set aside.
  • In a separate bowl, mix the melted butter, eggs, natural yogurt, and lemon juice.
  • Combine the two previous mixtures and mix well.
  • Pour the mixture into the cupcake liners.
  • Bake at 200°C for 25 minutes, or until a toothpick inserted comes out clean.
  • Cool and serve.
