Muffin Regina

This is a very simple muffin recipe that I prepare for my little one when she doesn't want to eat any type of fruit; in this case, I will make it with strawberries, but it can be made with vegetables or any fruit. I hope you can make it and enjoy it.

  • 1 cup sugar
  • 4 egg whites
  • 3/4 cups cookies, Crackers in small pieces (one package)
  • 1 cup wheat flour
  • 1 teaspoon baking powder
  • 1 pinch cream of tartar, (if you don't have it, skip it, it's to stabilize the egg whites)
  • 1 teaspoon liquid vanilla
  • 190 grams cream cheese
  • 1/2 cups powdered sugar
  • 1/2 sticks unsalted butter
  • 150 grams strawberry

  • Preheat the oven to 180ºC.
  • Crush the cookies.
  • Separate the egg whites from the yolks.
  • Cut the strawberries into small cubes.
  • Beat the egg whites until stiff peaks form.
  • Add cream of tartar; if you don't have it, add the crushed cookies, flour, baking powder, and continue beating until a creamy homogeneous batter forms.
  • Add vanilla, sugar, strawberries, and incorporate all the ingredients.
  • Place in greased and floured molds or in special paper muffin molds.
  • Bake for 20 minutes or until a wooden stick inserted comes out dry.
  • On the other hand, mix the butter, cream cheese, and powdered sugar until it forms a kind of nougat.
  • Enjoy.
