This is my favorite muffin recipe as it has a very peculiar flavor and is pleasant to any palate, as it is made with Oreo cookies, topped with chocolate chantilly.
Preheat the oven to 180ºC, place the liners in the muffin pans.
Beat the softened butter at room temperature with the sugar.
Add the egg yolks one by one, reserving the egg whites for later. Also, add the vanilla now.
In a separate bowl, mix the flour, cocoa, and baking powder, all previously sifted. Then add it to the batter, beating everything together very well. Beat again, ensuring everything is well integrated, and now fold in the grated Oreos.
Increase the speed of the mixer and gradually add the natural yogurt, beating until everything is perfectly mixed and a homogeneous batter is obtained.
Finally, beat the egg whites until stiff peaks form and gently fold them into the soft batter to make the muffins fluffy.
Scoop the batter using an ice cream scoop into the liners, being careful not to fill them completely as they tend to rise in volume.
Bake at 120 degrees for 15 minutes or until the tip of a toothpick comes out clean.
After the time has passed, take the muffins out of the oven and let them cool. While they cool, whip the chantilly to make the frosting. Once cooled, place the chantilly in a piping bag with a star tip and decorate the muffins. Place an Oreo cookie on top.
