This recipe is family-based, extremely delicious, and customizable to your taste or cravings; my kids love it, and especially enjoy participating in making it; it's quick and effective.
1 teaspoon vanilla essence, walnut, almond, or strawberry
1 cup wheat flour, sifted
1 tablespoon baking powder
2 cups Gamesa® pancake mix
1 package cream cheese
icing sugar, necessary amount

Preheat the oven to 180ºC.
Place the dry ingredients in a bowl and set aside.
Blend the oil, milk, eggs, essence, and sugar.
Gradually incorporate the previous mixture into the dry ingredients while folding with a whisk.
Place the muffin liners in the muffin pan and fill them with the mixture to 3/4 full.
Bake for 20 minutes, depending on your oven's power; remember that if you insert a toothpick into the muffin and it comes out dry, they are ready to be removed from the oven.
For the topping, beat the cream cheese until creamy.
Gradually add the powdered sugar until you achieve a firm consistency or to your liking.
