Strawberry Muffin

Fluffy and delicious Vanilla-Strawberry Muffins. Since I was very young, I've enjoyed making desserts, but I had few opportunities to do so. However, now my twins are my motivation to create beautiful and delicious desserts that I’m sure they will love one day.

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 1/2 cups powdered sugar
  • 2 eggs
  • 1 cup cow's milk
  • 1 teaspoon vanilla essence
  • 120 grams unsalted butter
  • 1 teaspoon vanilla essence
  • 12 strawberries, (6 diced and 6 halved)
  • mint leaves

  • Preheat the oven to 200ºC (moderate-high).
  • In a bowl, sift the flour, baking powder, sugar, and salt.
  • In another bowl, lightly beat the eggs, then add the milk, melted butter, and vanilla extract.
  • Slowly add to the bowl with the flour, mixing with a wooden spoon until all the ingredients are well combined.
  • Add 6 diced strawberries.
  • Fill the muffin cups two-thirds full and bake in the oven for 20 minutes, until golden and firm to the touch. Insert a knife to check that it comes out clean.
