Tiramisu Muffin

  • 60 grams unsalted butter
  • 120 grams sugar
  • 2 eggs
  • 150 grams flour
  • 1 teaspoon baking powder
  • 1 teaspoon liquid vanilla
  • 1 1/2 teaspoons instant coffee
  • 50 milliliters cow's milk
  • 30 milliliters coffee liqueur
  • 200 grams mascarpone cheese, for the topping
  • 1/4 liters cream , for the topping
  • sugar , to taste for the topping
  • cocoa powder, for decoration, for the topping

  • Beat the butter with the sugar until creamy.
  • Incorporate the eggs one by one and beat well.
  • Add the vanilla and instant coffee, beat well until everything is combined.
  • Add the flour, milk, and coffee liqueur in two parts and beat until a homogeneous batter forms.
  • Place the batter in muffin molds and bake at 180ºC for approximately 20 minutes. When ready, remove from the oven and let cool on a rack.
  • Topping: Beat the sugar and cheese until creamy, then pour in the cream and beat until fluffy.
