Village Cream Muffins

One of the ways I remember is through flavors; sometimes they remind me of a moment, sometimes of a person. With this recipe, I remember my grandmother, as it is her cream cake recipe turned into a muffin; the result? A soft, fluffy muffin full of flavor and memories. This recipe yields 5 large muffins.

  • 120 grams clotted cream
  • 1 cup flour
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • 1/2 cups brown sugar

  • Preheat the oven to 220 degrees Celsius.
  • Grease and flour 5 flan molds.
  • Whip the cream at high speed until it thickens, then add the sugar and continue whipping.
  • Once we have a smooth batter, add the eggs one by one.
  • Then add the vanilla, the sifted flour with the baking powder, and mix well until fully incorporated.
  • Fill 3/4 of the molds.
  • Sprinkle the surface of each one with sugar.
  • Lower the oven temperature to 200 degrees and bake the muffins for approximately 25 minutes. This depends on the oven, but they will be ready when they have puffed up and look golden. In any case, it's advisable to do the toothpick test.
