Niño Envuelto with Jam

The Niño Envuelto is a delicious dessert to prepare for any occasion. I love this dessert as you can pair it with your favorite jam.

  • 4 eggs
  • 120 grams sugar
  • 90 grams flour
  • 60 grams cornstarch
  • 1 teaspoon baking powder
  • powdered sugar
  • strawberry jams, or apricot

  • Beat the egg yolks with the sugar until frothy.
  • Sift together the flour, cornstarch, and baking powder.
  • Beat the 4 egg whites until stiff peaks form.
  • And fold the egg whites into the previous mixture.
  • Spread the batter on a greased and floured baking sheet.
  • It should be thin when spreading it.
  • Bake in a preheated oven at 300ºC for 15 minutes.
  • A cloth is sprinkled and dusted with powdered sugar.
  • When the cake is baked, turn it onto the cloth and roll it up.
  • Once cooled, it is unrolled and filled with jam and rolled up again. It is sprinkled with more powdered sugar.
