No-Bake Mango Cheesecake

Prepare this delicious no-bake mango cheesecake with very easy-to-find ingredients. This dessert is perfect for surprising your kids as it has a tasty cookie base, creamy filling, and is packed with mango. This mango cheesecake recipe is super simple because you just have to blend the ingredients in a blender.

  • 1 1/2 cups cookies, orange
  • 3/4 cups walnuts
  • 1/2 cups butter, melted
  • 2 cups cream cheese
  • 1 cup evaporated milk
  • 1 cup condensed milk
  • 1 teaspoon orange zest
  • 1 teaspoon vanilla essence
  • 2 envelopes unflavored gelatin powder, hydrated and melted
  • 1 cup mango, Manila, diced, for the filling
  • 3 mangoes, paradise, for the flower
  • peppermint, for decoration

  • For the base, place the cookies and nuts in a bag and crush them with a rolling pin until the cookies turn to powder.
  • Mix the pre-prepared ingredients and the butter in a bowl until you achieve a dough.
  • Using your hands, cover the mold with the dough to form the base. Refrigerate for 10 minutes.
  • For the cheesecake, blend the cream cheese, evaporated milk, condensed milk, orange zest, and vanilla. Pour the gelatin until fully incorporated.
  • Place half of the mixture in the mold, cover with Manila mango, and pour the rest of the cheesecake mixture. Refrigerate until set.
  • For the mango rose, place a damp sheet of Regio® Advanced under your board to secure it, cut thin slices of paradise mango and arrange them on a flat plate.
  • Form a rose with the mango strips and cover the cheesecake with them.
  • Decorate with mint and enjoy.
